Soup Preparation

    Roast the Apples

    Preheat the oven to 400°F (200°C). Core and slice the apples, then toss them with 1 tablespoon of olive oil and a pinch of salt. Spread them on a baking sheet and roast for about 20 minutes or until golden and soft.

    Sauté the Base

    In a large pot, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for another minute.

    Cook the Celery Root

    Add the diced celery root to the pot and stir. Cook for about 5 minutes until slightly softened.

    Combine and Simmer

    Pour in the vegetable broth, add the roasted apples, salt, black pepper, and thyme. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.

    Blend the Soup

    Using an immersion blender, carefully blend the soup until smooth. If you prefer a chunky texture, blend to your liking.

    Stir in the lemon juice, taste for seasoning, and adjust if necessary. Serve hot, garnished with additional fresh thyme if desired.
