    Prepare the Filet Mignon

    Season the Wagyu filet mignon with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat. Sear the filets for about 4-5 minutes on each side for medium-rare. Remove from skillet and let rest.

    Make the Creamed Spinach

    In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant. Add fresh spinach and cook until wilted. Pour in heavy cream and simmer until thickened. Season with salt and pepper to taste.

    Prepare the Pommes Frites

    Cook the pommes frites according to package instructions or deep fry until golden brown and crispy. Season with salt.

    Make the Cabernet Demi-Glace

    In a saucepan, combine Cabernet Sauvignon and beef stock. Bring to a boil and reduce heat to simmer until reduced by half. In a small bowl, mix cornstarch and water to make a slurry. Stir slurry into the sauce to thicken. Season with salt and pepper to taste.

    Plate the Dish

    On each plate, place a filet mignon, a generous serving of creamed spinach, and a side of pommes frites. Drizzle the Cabernet demi-glace over the filet and serve immediately.
