Ice Cream Base and Meringue

Method

Preparation Steps

  1. 1

    Make the Ice Cream

In a saucepan, combine heavy cream, whole milk, sugar, and vanilla extract. Heat over medium heat until the sugar dissolves. In a separate bowl, whisk the egg yolks. Slowly pour the warm cream mixture into the yolks while whisking to temper. Return to the saucepan and cook until thickened. Chill completely, then churn in an ice cream maker according to manufacturer instructions.

  2. 2

    Prepare the Meringue

In a mixing bowl, combine meringue powder and water and whip until soft peaks form. Gradually add the sugar while continuing to beat until stiff peaks form. Set aside.

  3. 3

    Assemble the Baked Alaska

Slice the cake to fit in a bowl. Place the cake at the bottom, then fill the bowl with the homemade ice cream. Cover with plastic wrap and freeze until solid, about 4 hours.

  4. 4

    Finish with Meringue

Once the ice cream is solid, remove from the bowl and place on a baking sheet. Spread the meringue evenly over the ice cream, making sure to seal the edges.

  5. 5

    Flame the Baked Alaska

Using a kitchen torch, carefully brown the meringue until golden. If desired, pour dark rum or brandy over the top and ignite for a dramatic presentation. Serve immediately.
