For the Tater Kegs

Prepare the Potatoes
Peel and grate the russet potatoes using a box grater. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible.

Mix the Ingredients
In a large mixing bowl, combine the grated potatoes, chopped bacon, cheddar cheese, chopped chives, all-purpose flour, salt, black pepper, and beaten egg. Mix until well combined.

Shape the Kegs
Using your hands, form the mixture into small keg-shaped balls, about the size of a golf ball.

Heat the Oil
In a deep fryer or large pot, heat oil to 350°F (175°C).

Fry the Tater Kegs
Carefully drop the tater kegs into the hot oil in batches. Fry for about 4-5 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Combine Ingredients
In a saucepan over medium heat, combine the shredded cheddar cheese, cream cheese, and beer. Stir continuously until the cheeses are melted and the mixture is smooth.

In a small bowl, mix together the sriracha sauce and mayonnaise until smooth. Adjust the amount of sriracha to taste.
