Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch wide, to create fries.

Soak the Potatoes

Place the cut fries in a bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

Cooking

Heat the Oil

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature for accuracy.

Dry the Potatoes

Drain the soaked fries and pat them dry with paper towels to remove excess moisture.

Fry the Potatoes

Working in batches, carefully add the fries to the hot oil. Fry for about 5-7 minutes or until golden brown and crispy. Avoid overcrowding the pot.

Drain and Season

Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. Immediately sprinkle with salt and black pepper to taste.

Serving

Serve with Ketchup

Transfer the crispy fries to a serving plate and serve with a cup of ketchup on the side for dipping.
