Set Up Breading Station
Prepare three shallow bowls: one with flour (mixed with salt, black pepper, garlic powder, onion powder, and paprika), one with beaten eggs, and one with breadcrumbs.
Bread the Chicken
Dip each chicken piece first into the flour mixture, shaking off excess, then into the egg, and finally into the breadcrumbs, pressing gently to adhere.
Heat Oil
In a large skillet or deep fryer, heat oil over medium-high heat until it reaches about 350°F (175°C). You can test by dropping a small piece of bread; it should sizzle immediately.
Fry the Nuggets
Carefully add the breaded chicken pieces in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes per side or until golden brown and cooked through.
Drain and Serve
Use a slotted spoon to remove the chicken nuggets and place them on a plate lined with paper towels to drain excess oil. Serve immediately with your choice of dipping sauce.
