Dip Preparation

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and place on a paper towel to drain excess fat. Once cooled, crumble the bacon and set aside.

    Prepare the Corn

    In the same skillet, add the sweet corn and cook for about 5 minutes until it starts to caramelize slightly. Remove from heat.

    Mix the Dip Ingredients

    In a large bowl, combine the cream cheese, cheddar cheese, cooked corn, crumbled bacon, finely chopped jalapeño, garlic powder, lime juice, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

    Chill the Dip

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Corn Chips Preparation

    Cut the Tortillas

    Stack the corn tortillas and cut them into triangles (like pizza slices).

    Heat the Oil

    In a large frying pan, heat the vegetable oil over medium-high heat until hot.

    Fry the Chips

    Carefully add the tortilla triangles to the hot oil in batches, frying until they are golden brown and crispy, about 2-3 minutes per batch. Remove the chips with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

    While still warm, sprinkle the chips with salt to taste.
