    Brown the Steak Tips

    In a large heavy pot or Dutch oven, heat olive oil over medium-high heat. Add the beef steak tips and season with salt and black pepper. Sear the meat until browned on all sides, approximately 5-7 minutes. Remove the steak from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, celery, and minced garlic. Sauté for 3-4 minutes until the onions become translucent. Then add the carrots and potatoes. Cook for an additional 5 minutes, stirring occasionally.

    Add Liquids & Seasoning

    Pour in the Guinness stout and beef stock, scraping the bottom of the pot to deglaze and incorporate any browned bits. Add the thyme and bay leaves to the mixture.

    Combine & Simmer

    Return the browned steak tips to the pot. Bring the mixture to a boil, then reduce heat to low, cover, and let it simmer for 1.5 to 2 hours, or until the meat is tender and the flavors have melded together.

    Final Touches

    Taste and adjust seasoning with additional salt and pepper if needed. Remove bay leaves before serving.
