    Prepare the Vegetables

    Thinly slice the onion and bell peppers. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced onions and bell peppers. Sprinkle with salt, black pepper, and garlic powder. Sauté for about 5-7 minutes until the vegetables are soft and slightly caramelized.

Assemble the Quesadillas

    Build the Quesadilla

    On one half of a tortilla, sprinkle 1/2 cup of jack cheese. Add a portion of the sautéed onions and peppers on top of the cheese. If using, add your choice of protein (chicken, garlic chicken, shrimp, or steak) on top of the vegetables. Top with another 1/2 cup of jack cheese and fold the tortilla in half.

Cook the Quesadillas

    Cook the Quesadilla

    In the same skillet, add another tablespoon of olive oil over medium heat. Place the folded quesadilla in the skillet and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted. Remove from skillet and repeat with the remaining tortillas.

Serve

    Slice and Serve

    Once cooked, transfer the quesadilla to a cutting board. Let it cool for a minute, then cut into wedges. Serve warm with salsa, sour cream, or guacamole.
