Mushroom Preparation

Prepare the Mushrooms
Clean the cremini mushrooms with a damp cloth and remove stems. Set aside.

Bread the Mushrooms
Set up a breading station with three shallow dishes: one with flour mixed with salt and pepper, one with beaten eggs, and one with breadcrumbs. Dip each mushroom in the flour, then the egg, and finally coat with breadcrumbs.

Fry the Mushrooms
In a large skillet, heat olive oil over medium-high heat. Fry the breaded mushrooms in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Add Tomatoes and Vodka
Add crushed tomatoes and vodka to the saucepan. Bring to a simmer and let cook for about 10 minutes, stirring occasionally.

Finish the Sauce
Reduce heat to low and stir in heavy cream, oregano, salt, pepper, and grated Parmesan cheese. Simmer for an additional 5 minutes until the sauce thickens slightly.

Prepare the French Bread
Slice the French bread in half lengthwise. Place the toasted halves on a baking sheet.

Layer the Ingredients
On each half of the bread, layer the fried mushrooms, followed by provolone cheese and shredded mozzarella.

Broil the Sandwiches
Place the baking sheet in the oven under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.

Remove from oven, drizzle with vodka blush sauce, and serve immediately.
