Prepare the Chicken
If using pre-cooked fried chicken, chop the chicken into bite-sized pieces. If cooking fresh, fry a chicken breast until golden brown and cooked through, then slice.

Chop Vegetables
Dice the bell pepper and halve the cherry tomatoes.

Assemble the Salad
In a large salad bowl, add the mixed greens as the base. Layer with bacon bits, chopped fried chicken, diced bell pepper, halved cherry tomatoes, and shredded Cheddar Jack cheese.
Making the Dressing

Combine Ingredients
In a small bowl, whisk together honey and Dijon mustard until smooth. Slowly drizzle in olive oil while whisking to emulsify the dressing.

Add Seasoning
Stir in apple cider vinegar, and season with salt and black pepper to taste. Adjust seasoning if necessary.
