Method

Prepare the Salmon

    Season the Salmon

    Rub the salmon fillets with olive oil, salt, black pepper, and lemon juice. Ensure they are evenly coated.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F to 400°F).

    Grill the Salmon

    Place the seasoned salmon fillets on the grill. Grill for about 5-6 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Prepare the Sweet Red Pepper Sauce

    Roast the Red Peppers

    Char the red bell peppers on the grill or under the broiler until the skin is blackened. Place them in a bowl and cover with plastic wrap to steam for 10 minutes.

    Blend the Sauce

    Peel the skin off the peppers, remove the seeds, and place the peppers in a blender. Add garlic, honey, red wine vinegar, salt, and black pepper. Blend until smooth.

Prepare the Rice Pilaf

    Sauté the Onion

    In a medium saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.

    Cook the Rice

    Add the long-grain rice to the saucepan and stir for 1-2 minutes. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and liquid is absorbed.
