    Butter the Bread

    Spread 1 tablespoon of butter on one side of each slice of rye bread. This will help achieve a golden crust when grilled.

    Assemble the Sandwich

    On the unbuttered side of two slices of rye bread, layer the following: 4 oz of lean corned beef, ½ cup of sauerkraut, 2 slices of Swiss cheese, and 2 tablespoons of 1000 Island dressing. Top with the remaining two slices of rye bread, ensuring the buttered sides are facing outward.

Grilling

    Heat the Grill

    Preheat a skillet or grill over medium heat.

    Grill the Sandwich

    Once the skillet is hot, place the assembled sandwiches in the skillet. Grill for 4-5 minutes on one side until golden brown. Flip the sandwiches carefully and grill the other side for another 4-5 minutes until the cheese is melted and the bread is crispy.

Serving

    Slice and Serve

    Remove the grilled Reubens from the skillet. Allow to cool for a minute, then slice in half and serve with additional 1000 Island dressing on the side for dipping.
