Prepare the Batter
In a large bowl, whisk together the beer, all-purpose flour, cornstarch, baking powder, salt, and black pepper until smooth. Let the batter sit for about 10 minutes.

Heat the Oil
In a deep frying pan or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Haddock
Dip each haddock fillet into the batter, allowing excess batter to drip off. Carefully place the battered fillets in the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the oil and drain on paper towels.

Assemble the Sandwich
On the bottom half of each brioche bun, place a piece of fried haddock. Top with a slice of American cheese, a lettuce leaf, and a generous spoonful of tartar sauce. Place the top half of the bun on each sandwich.
