Prepare the Battering
In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold water to create a smooth batter.

Fry the Mahi Mahi
Heat vegetable oil in a deep pan over medium-high heat. Dip the mahi mahi fillets into the batter and carefully place them in the hot oil. Fry until golden brown and cooked through, about 3-4 minutes per side. Remove and drain on paper towels.

Mix the Slaw
In a large bowl, combine the shredded cabbage, shredded carrot, sliced red onion, and chopped cilantro. In a separate small bowl, whisk together lime juice, olive oil, salt, and black pepper. Pour the dressing over the slaw and toss well to combine.
Chipotle Ranch Dressing Preparation

Prepare the Dressing
In a small bowl, mix the ranch dressing, minced chipotle peppers, and lime juice until well combined. Adjust the seasoning with additional chipotle or lime juice if desired.

Assemble the Tacos
Warm the corn tortillas in a dry skillet for about 30 seconds on each side. Place fried mahi mahi on each tortilla, topped with the slaw and a drizzle of chipotle ranch dressing. Serve with lime wedges on the side.

Fry or bake the fries according to package instructions or your preferred method. Serve alongside the tacos.
