Cooking Pasta

Boil the Pasta
In a large pot, bring salted water to a boil. Add the cavatappi pasta and cook according to package instructions until al dente. Drain and set aside.
Making Beer Cheese Sauce

Create Roux
Add the all-purpose flour to the melted butter and whisk continuously for about 1-2 minutes until it’s slightly golden and bubbly.

Add Milk and Beer
Gradually whisk in the milk and beer until smooth. Continue cooking for 5-7 minutes until the mixture thickens.

Incorporate Cheeses
Reduce the heat to low and add the shredded cheddar cheese and cream cheese. Stir until completely melted and smooth.

Season the Sauce
Add garlic powder, onion powder, salt, and black pepper to the cheese sauce. Stir to combine.
Combine and Bake

Mix Pasta and Sauce
In a large mixing bowl, combine the cooked cavatappi pasta with the beer cheese sauce. Stir until the pasta is fully coated.

Prepare for Baking
Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture into a greased baking dish.

Add Topping
Sprinkle the crushed Ritz crackers evenly over the top of the mac and cheese.

Bake in the preheated oven for 20-25 minutes or until the top is golden brown and crispy.
