Method

Prepare Dumpling Filling

    Mix Ingredients

    In a large mixing bowl, combine the ground chicken, minced lemongrass, minced garlic, minced ginger, chopped green onions, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are fully incorporated.

    Chill the Filling

    Cover the bowl with plastic wrap and refrigerate the mixture for at least 30 minutes to allow the flavors to meld.

Assemble Dumplings

    Prepare Wrappers

    Lay out the wonton wrappers on a clean surface. Keep a small bowl of water nearby.

    Fill and Fold

    Place about 1 tablespoon of the chicken filling in the center of each wrapper. Dip your finger in water and moisten the edges of the wrapper. Fold the wrapper over the filling to form a triangle and press to seal. Ensure there are no air pockets.

    Repeat

    Continue filling and sealing the rest of the wrappers until all filling is used.

Cook Dumplings

    Heat Oil

    In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

    Fry Dumplings

    Carefully add the dumplings to the skillet, making sure not to overcrowd. Fry for about 2-3 minutes until the bottoms are golden brown.

    Steam Dumplings

    Add a splash of water to the skillet and cover immediately. Steam the dumplings for an additional 5-6 minutes or until fully cooked through.

    Remove and Drain

    Remove the dumplings from the skillet and let them drain on paper towels.

Prepare Sauces

    Make Ginger Sauce

    In a small bowl, whisk together the grated ginger, soy sauce, rice vinegar, honey, and sesame oil until well combined.

    Make Bang Bang Sauce

    In another bowl, mix the mayonnaise, sriracha sauce, honey, and lime juice until smooth and creamy.

Serve

    Plate the Dumplings

    Arrange the fried dumplings on a serving platter. Serve warm with the ginger sauce and spicy bang bang sauce on the side.
