Quinoa Preparation

    Rinse the Quinoa

    In a fine-mesh strainer, rinse the quinoa under cold running water for about 2 minutes to remove any bitterness.

    Cook the Quinoa

    In a medium-sized pot, combine the rinsed quinoa, vegetable broth, and salt. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 15 minutes, or until the liquid is absorbed and the quinoa is fluffy. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Vegetable Stir-Fry

    Heat the Oil

    In a large skillet or wok, heat the olive oil and sesame oil over medium-high heat until hot.

    Sauté Aromatics

    Add the minced garlic and ginger to the skillet. Stir-fry for about 30 seconds until fragrant.

    Add Vegetables

    Add the broccoli, carrot, bell pepper, and snow peas to the skillet. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.

    Season the Stir-Fry

    Pour in the soy sauce, and season with salt and black pepper. Stir well to combine and cook for an additional 2 minutes.

    Serve the Dish

    Once cooked, remove from heat and serve the vegetable stir-fry over a bed of fluffy quinoa.
