Method

Preparation

  1. 1

    Prepare Filet Mignon

Take the filet mignon pieces out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking.

  2. 2

    Prepare Lobster Tails

Using kitchen scissors, cut down the top shell of the lobster tails, stopping just before the tail fin. Gently pull the meat out and lay it on top of the shell.

Marinade

  1. 3

    Marinate the Filet Mignon

In a small bowl, mix olive oil, minced garlic, chopped rosemary, salt, black pepper, and lemon juice. Rub the mixture all over the filet mignon pieces and let marinate for at least 30 minutes.

Cooking

  1. 4

    Cook Filet Mignon

Preheat a grill or skillet over high heat. Cook the filet mignon for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Let rest for 5 minutes before serving.

  2. 5

    Cook Lobster Tails

While the steak rests, grill the lobster tails for about 5-7 minutes, meat side down. Brush with melted butter sauce during grilling.

Butter Sauce

  1. 6

    Prepare Butter Sauce

In a small saucepan, melt the unsalted butter over low heat. Once melted, stir in chopped parsley and lemon zest. Remove from heat and set aside.

Serving

  1. 7

    Plate the Dish

Serve the filet mignon on a plate alongside the grilled lobster tails. Drizzle the butter sauce over the lobster and garnish with additional parsley if desired.
