    Prepare the Filet Mignon

    Take the filet mignon pieces out of the refrigerator and let them sit at room temperature for about 30 minutes to ensure even cooking. Season both sides with salt, black pepper, garlic powder, and dried thyme.

    Prepare the Sea Scallops

    Pat the sea scallops dry with paper towels to remove excess moisture. Season both sides with salt and black pepper.

    Cook the Filet Mignon

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the filet mignon pieces. Cook for 4-5 minutes on each side for medium-rare, or longer if desired. Once cooked to your liking, remove from the skillet and let them rest for 5 minutes.

    Cook the Sea Scallops

    In the same skillet, add another tablespoon of olive oil and 2 tablespoons of unsalted butter. When the butter has melted and is bubbling, add the sea scallops. Cook for about 2-3 minutes per side until they are golden brown and opaque in the center. Avoid overcrowding the pan.

    On each plate, arrange the filet mignon and top with sea scallops. Garnish with chopped fresh parsley and serve with a lemon wedge on the side.
