Preparation

    Prepare the Quinoa

    Rinse 1 cup of quinoa under cold water. In a medium saucepan, add the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy.

    Prepare the Asparagus

    While the quinoa is cooking, preheat your oven to 400°F (200°C). Trim the ends off 200 grams of asparagus and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil, and sprinkle with salt and pepper.

    Prepare the Chicken or Salmon

    Season 2 pieces of chicken breast (or salmon fillets) with garlic powder, salt, and black pepper. Drizzle with 1 tablespoon of olive oil and lemon juice.

Cooking

    Roast the Asparagus

    Place the baking sheet with asparagus in the oven and roast for 15-20 minutes until tender and slightly crispy.

    Cook the Chicken or Salmon

    In a skillet over medium heat, add the seasoned chicken breast (or salmon) and cook for about 7-8 minutes per side, or until fully cooked and golden brown.

    Fluff the Quinoa

    Once the quinoa is cooked, fluff it with a fork and set aside.

Serving

    Plate the Dish

    On two plates, serve the quinoa as a base, top it with roasted asparagus, and place the cooked chicken or salmon on top. Drizzle with additional lemon juice if desired.
