Marinate the Chicken
In a bowl, combine the chicken thighs with half of the teriyaki sauce (made in the next step). Cover and marinate in the refrigerator for at least 30 minutes to enhance the flavor.

Combine Sauce Ingredients
In a saucepan over medium heat, mix together soy sauce, brown sugar, rice vinegar, sesame oil, grated ginger, and minced garlic. Stir until the sugar is dissolved and the mixture is well combined.

Thicken Sauce
In a separate small bowl, mix cornstarch and water until smooth. Slowly add this mixture to the saucepan while stirring constantly. Bring to a simmer and cook for about 2-3 minutes until the sauce thickens. Remove from heat and set aside.
