Method
Preparing the Steak
- 1
Season the Steak
In a small bowl, mix together the olive oil, garlic powder, salt, and black pepper. Rub this mixture all over the sirloin steak pieces, ensuring they are evenly coated. Let the steak rest for about 15 minutes at room temperature.
- 2
Cook the Steak
Preheat a grill or frying pan over medium-high heat. Once hot, add the rosemary sprigs and the seasoned steaks. Cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Remove from heat and let rest for 5 minutes before slicing.
Preparing the Calamari
- 3
Prepare the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to create a uniform coating mixture.
- 4
Coat the Calamari
Dredge each calamari ring in the flour mixture, shaking off any excess. Ensure each ring is well-coated.
- 5
Fry the Calamari
In a large pot or deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add the coated calamari in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.
- 6
Serve
Arrange the fried calamari on a serving platter. Optionally, serve with lemon wedges for squeezing over the calamari.
