Marinate the Salmon
In a mixing bowl, combine soy sauce, mirin, sesame oil, minced garlic, and grated ginger. Mix well.

Prepare the Salmon
Add the salmon fillets to the marinade, ensuring each fillet is well coated. Cover and refrigerate for at least 30 minutes.

Prepare the Vegetables
While the salmon is marinating, slice the zucchini, bell pepper, and julienne the carrots. Chop the green onions and set aside.

Cook the Salmon
Heat a grill or frying pan over medium-high heat. Remove the salmon from the marinade (reserve the marinade) and place on the grill. Cook for about 5-7 minutes on each side, basting occasionally with the reserved marinade, until the salmon is cooked through and flakes easily with a fork.

In another pan, heat a little sesame oil over medium heat. Add the sliced zucchini, bell pepper, and julienned carrots. Sauté for about 5-7 minutes until they are tender but still crisp. Stir in the chopped green onions and sauté for an additional minute.
