Method

Preparation

  1. 1

    Prepare the Marinade

In a bowl, combine the lemon juice, olive oil, minced garlic, and chopped parsley. Whisk until well blended.

  2. 2

    Marinate the Fish

Place the Chilean sea bass fillets in a shallow dish and season with salt and black pepper. Pour the marinade over the fish, ensuring it is well coated. Cover and refrigerate for at least 30 minutes.

Cooking

  1. 3

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 4

    Prepare the Vegetables

While the fish is marinating, wash and trim the asparagus. In a bowl, toss the asparagus and halved cherry tomatoes with a drizzle of olive oil, salt, and pepper to taste.

  3. 5

    Roast the Fish and Vegetables

Place the marinated Chilean sea bass on a baking sheet lined with parchment paper. Arrange the asparagus and cherry tomatoes around the fish. Roast in the preheated oven for 15-20 minutes, or until the fish is flaky and the vegetables are tender.

Serving

  1. 6

    Plate and Serve

Once cooked, remove from the oven. Serve the Chilean sea bass with the roasted asparagus and cherry tomatoes on the side. Drizzle any remaining marinade over the top for added flavor.
