Preparing Calamari

Begin by rinsing the cleaned calamari rings under cold water. Pat them dry with paper towels to remove excess moisture.

In a bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Dredge the calamari rings in the flour mixture, ensuring they are evenly coated.

In a large skillet or deep frying pan, heat the olive oil over medium-high heat until hot but not smoking.

Carefully add the coated calamari to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Making Teriyaki Sauce

In a small saucepan, combine the soy sauce, brown sugar, grated ginger, minced garlic, and sesame oil. Stir well to combine.

In a separate small bowl, mix the cornstarch with water to create a slurry. Add this to the saucepan and bring the mixture to a simmer over medium heat, stirring continuously until the sauce thickens, about 3-5 minutes.
