    Prepare the Kefir Water Base

    In a large glass jar, combine the filtered water and kefir grains. Stir gently to mix.

    Add Blueberries and Lavender

    Add the fresh blueberries and dried lavender to the jar. If using, add the raw honey or maple syrup and stir gently to combine.

    Ferment

    Cover the jar with a breathable cloth or coffee filter secured with a rubber band. Let it sit at room temperature for 24-48 hours, depending on your desired level of fermentation. Check for a slightly tangy flavor.

    Strain and Store

    After fermentation, strain the kefir water into another glass jar to remove the solids. Reserve the kefir grains for future use. You can enjoy the kefir water immediately or refrigerate it to chill.

    Serve

    Serve the kefir water over ice, optionally garnished with a few fresh blueberries and a sprig of lavender.
