Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.

Stir in the diced carrots, celery, and potatoes. Cook for an additional 5 minutes, stirring occasionally.

Combine Broth and Tomatoes

Pour in the vegetable broth and add the canned tomatoes, bay leaf, thyme, salt, and black pepper. Bring the mixture to a boil.

Stir in the fresh spinach and cook for another 5 minutes until the spinach is wilted.
