    Prepare the batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, and salt. Gradually add the ice water while whisking until just combined. Be careful not to overmix; a few lumps are fine.

    Prepare the vegetables and prawns

    Ensure all vegetables and prawns are prepped and ready to go. Pat them dry with paper towels to ensure the batter adheres properly.

    Heat the oil

    In a deep pot or fryer, heat the vegetable oil to 180°C (350°F). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle and float to the surface.

    Fry the tempura

    Dip the prawns and vegetables into the batter, allowing excess to drip off. Carefully place them in the hot oil, frying in batches to avoid overcrowding. Fry until golden and crispy, about 2-3 minutes for prawns and 3-4 minutes for vegetables.

    Drain and serve

    Once cooked, remove the tempura from the oil and place on a paper towel-lined plate to drain excess oil. Serve hot with dipping sauce.
