In a large pot, heat 6 cups of water to 165°F (74°C). Add the Vienna malt and pale malt, stirring well. Maintain a temperature of 150°F (65°C) for 60 minutes.

Mashing

After mashing, sparge with hot water to collect around 6 cups of wort.

Sparging

Bring the wort to a boil and add the Citra and Cascade hops. Boil for 60 minutes, adding the East Kent Goldings hops in the last 15 minutes.

Boiling

Cool the wort quickly to about 70°F (21°C) using a wort chiller or an ice bath.

Cooling

Transfer the cooled wort to a sanitized fermentation vessel, pitch the Brettanomyces yeast, and seal with an airlock. Allow to ferment for 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of water, add to the bottling bucket, and then transfer the beer to bottle.

Bottling

Seal the bottles and allow them to condition at room temperature for 1-2 weeks before refrigerating and enjoying.
