Method

Preparation of Plantains

  1. 1

    Peel the Plantains

Peel the green plantains by cutting off both ends and making a slit down the length of each plantain. Carefully remove the peel.

  2. 2

    Slice the Plantains

Cut each peeled plantain into 1-inch thick slices.

Frying the Plantains

  1. 3

    Heat the Oil

In a large frying pan, heat vegetable oil over medium heat until it reaches about 350°F (175°C).

  2. 4

    First Fry

Carefully add the plantain slices to the hot oil, frying them in batches to avoid overcrowding. Fry for about 3-4 minutes or until they are golden yellow and slightly soft.

  3. 5

    Drain the Plantains

Using a slotted spoon, remove the fried plantains from the oil and drain them on paper towels.

  4. 6

    Flatten the Plantains

Flatten each fried plantain piece using the bottom of a glass or a tostonera until they are about ½ inch thick.

  5. 7

    Second Fry

Return the flattened plantains to the hot oil and fry again for about 2-3 minutes or until they are crispy and golden brown.

  6. 8

    Season the Tostones

Remove the tostones from the oil, drain on paper towels, and sprinkle with salt and garlic powder while still hot.

Serving

  1. 9

    Serve the Tostones

Serve the tostones warm with a wedge of fresh lime and a sprinkle of chopped cilantro, if desired.
