Marinating the Chicken

    In a large bowl, combine buttermilk, hot sauce, salt, black pepper, garlic powder, and onion powder.

    Add the cut chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Breading the Chicken

    Prepare the Breading Mixture

    In a separate bowl, whisk together all-purpose flour, cornstarch, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper.

    Bread the Chicken

    Remove the marinated chicken from the refrigerator. Dredge each piece in the flour mixture, ensuring an even coating. Shake off excess flour and set aside on a wire rack.

Frying the Chicken

    In a large heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Carefully add the breaded chicken pieces to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 12-15 minutes, turning occasionally, until the chicken is golden brown and cooked through.

    Remove the fried chicken from the oil and place it on a wire rack or paper towels to drain excess oil.
