Method
Steak Preparation
- 1
Season the Steak
Pat the ribeye steaks dry with paper towels. Season both sides generously with salt, black pepper, and garlic powder.
- 2
Heat the Pan
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
- 3
Cook the Steak
Add the seasoned steaks to the hot skillet. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.
- 4
Rest the Steak
Remove the steaks from the skillet and let them rest for 5 minutes before slicing.
Chimichurri Sauce Preparation
- 5
Prepare Ingredients
Finely chop the fresh parsley, oregano, and garlic cloves.
- 6
Mix the Sauce
In a bowl, combine the chopped parsley, oregano, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Stir until well mixed.
- 7
Adjust Seasoning
Taste and adjust seasoning with additional salt if necessary. Let the sauce sit for at least 15 minutes to allow the flavors to meld.
Side Salad Preparation
- 8
Prepare the Vegetables
Wash and dry the mixed greens, cherry tomatoes, and cucumber. Halve the cherry tomatoes and slice the cucumber.
- 9
Make the Salad
In a large bowl, combine the mixed greens, cherry tomatoes, and cucumber.
- 10
Dress the Salad
Drizzle with olive oil and balsamic vinegar. Season with salt and black pepper to taste. Toss gently to combine.
