    Prepare the Oxtail

    Rinse the oxtail under cold water and pat dry with paper towels. Trim any excess fat if necessary.

    Chop Vegetables

    Dice the onion, garlic, carrots, celery, and tomatoes into small pieces.

    Seasoning

    In a small bowl, combine salt, black pepper, and paprika.

Cooking

    Brown the Oxtail

    In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the oxtail pieces and brown on all sides for about 5-7 minutes. Remove from the pot and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Add Tomatoes and Seasoning

    Stir in the diced tomatoes and the seasoning mixture. Cook for another 3-4 minutes.

    Combine Ingredients

    Return the browned oxtail to the pot. Pour in the beef broth, add bay leaves, thyme, and red wine if using. Stir well to combine.

    Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 2.5 to 3 hours, or until the oxtail is tender.

Serving

    Once the oxtail is tender, remove from heat. Discard the bay leaves. Serve hot, garnished with chopped fresh parsley.
