For the Plantain Chips

Prepare the Plantains
Peel the green plantains by cutting off the ends and making a lengthwise slit in the skin. Remove the skin and slice the plantains thinly (about 1/8 inch thick) using a sharp knife or a mandoline.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Fry the Chips
Carefully add the sliced plantains to the hot oil in small batches to avoid overcrowding. Fry until they are golden brown and crispy, about 3-5 minutes per batch.

Combine Ingredients
In a medium bowl, combine the mayonnaise, hot sauce, lime juice, garlic powder, and salt. Mix well until all ingredients are thoroughly combined.

Adjust Seasoning
Taste the sauce and adjust the salt or hot sauce to your liking for the desired spice level.

Transfer the spicy dipping sauce to a serving bowl. Serve alongside the crispy plantain chips.
