In a blender, combine garlic cloves, olive oil, orange juice, lime juice, oregano, cumin, salt, and black pepper. Blend until smooth to create a marinade.

Using a sharp knife, score the pork shoulder in a crosshatch pattern, making shallow cuts about 1 inch apart.

Marinate the Pork
Rub the marinade all over the pork shoulder, ensuring it gets into the scored areas. Place the pork in a large resealable bag or container and refrigerate for at least 12 hours, preferably overnight.

Preheat your oven to 300°F (150°C).

Prepare the Pork for Roasting
Remove the pork from the marinade and let it come to room temperature for about 30 minutes. Reserve the marinade for basting. If using, tie the pork with cooking string to maintain its shape during roasting.

Wrap the pork shoulder tightly in aluminum foil and place it in a roasting pan. Roast in the preheated oven for about 4 hours.
