Soak the Potatoes
Place the cut potato strips into a large bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch, resulting in crispier fries.

Preheat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the right temperature.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.

Fry the Potatoes (First Fry)
Carefully add the dried potato strips to the hot oil in batches, making sure not to overcrowd the pot. Fry for about 4-5 minutes until they are soft but not browned. Remove with a slotted spoon and drain on paper towels.

Increase the oil temperature to 375°F (190°C) for the second fry.

Return the partially fried potatoes to the hot oil in batches and fry for an additional 2-3 minutes until they are golden brown and crispy. Remove and drain on paper towels again.
