Mofongo

Steak Sauté

Method

Mofongo

  1. 1

    Prepare the Plantains

Peel the green plantains and cut them into 1-inch thick slices.

  2. 2

    Fry the Plantains

In a large pot, heat oil over medium heat. Fry the plantain slices until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

  3. 3

    Mash the Mofongo

In a large bowl, combine the fried plantains, garlic, pork cracklings, and salt. Mash together using a mortar and pestle or a potato masher until smooth and well combined.

  4. 4

    Shape the Mofongo

Shape the mashed mixture into a ball or mound and keep warm until serving.

Steak Sauté

  1. 5

    Prepare the Ingredients

Slice the steak into thin strips, bell peppers into strips, and onion into thin slices. Mince the garlic cloves.

  2. 6

    Cook the Steak

In a large skillet, heat olive oil over medium-high heat. Add the steak strips and season with salt and black pepper. Sauté until browned and cooked to desired doneness, about 5-7 minutes. Remove from skillet and set aside.

  3. 7

    Sauté the Vegetables

In the same skillet, add more olive oil if necessary. Add the onion and bell peppers, sautéing until they are tender, about 5 minutes. Add the minced garlic and cook for an additional minute.

  4. 8

    Combine and Serve

Return the cooked steak to the skillet with the vegetables, mixing everything together. Cook for 2 more minutes and serve warm alongside the mofongo.
