Method

Mofongo Directions

  1. 1

    Prepare Plantains

Peel the green plantains and cut them into 1-inch pieces.

  2. 2

    Fry Plantains

In a large pot, heat water over medium heat. Add the plantain pieces and cook for about 15 minutes or until fork-tender.

  3. 3

    Mash Ingredients

Drain the plantains and transfer them to a large bowl. Add garlic cloves, pork cracklings, salt, and olive oil. Mash together until well combined and creamy.

  4. 4

    Shape Mofongo

Shape the mashed mixture into a ball or mound and set aside.

Salmon Directions

  1. 5

    Prepare Salmon

Preheat the oven to 400°F (200°C).

  2. 6

    Season Salmon

In a small bowl, mix lemon juice, garlic powder, paprika, salt, and black pepper. Rub this mixture over the salmon fillets.

  3. 7

    Cook Salmon

Heat olive oil in an oven-safe skillet over medium-high heat. Sear the salmon fillets skin-side down for 3-4 minutes until crispy. Flip the fillets and transfer the skillet to the preheated oven. Bake for 8-10 minutes or until the salmon is cooked through.

Assembly Directions

  1. 8

    Plate Mofongo and Salmon

Place a mound of mofongo on each plate and top with a salmon fillet.

  2. 9

    Garnish

Sprinkle chopped parsley over the dish and serve with lemon wedges on the side.
