Roasted Pork
Method
Mofongo
- 1
Prepare the Plantains
Peel the green plantains and cut them into 1-inch thick slices.
- 2
Fry the Plantains
In a large skillet, heat olive oil over medium heat. Add the plantain slices and fry until golden brown, about 4-5 minutes on each side. Remove from skillet and drain on paper towels.
- 3
Mash the Ingredients
In a large bowl, combine the fried plantains, garlic cloves, salt, and pork cracklings. Using a mortar and pestle or a sturdy fork, mash everything together until well combined.
- 4
Add Chicken Broth
Gradually add the chicken broth to the mashed plantains, mixing until you achieve a smooth and creamy consistency.
Roasted Pork
- 5
Preheat the Oven
Preheat your oven to 300°F (150°C).
- 6
Prepare the Pork Shoulder
In a bowl, mix together garlic powder, onion powder, cumin, oregano, salt, black pepper, olive oil, and lime juice to create a marinade.
- 7
Marinate the Pork
Rub the marinade all over the pork shoulder, ensuring it is well coated. Allow it to marinate for at least 1 hour, or preferably overnight in the refrigerator.
- 8
Roast the Pork
Place the marinated pork shoulder in a roasting pan and cover it with aluminum foil. Roast in the preheated oven for about 3 to 4 hours, or until the meat is tender and easily pulls apart.
- 9
Rest and Serve
Remove the pork from the oven, let it rest for 15 minutes, then slice and serve alongside the mofongo.
