Mofongo Preparation

    Frying the Plantains

    Peel and chop the green plantains into chunks. Heat olive oil in a frying pan over medium heat. Fry the plantain chunks until golden brown on all sides, about 5-7 minutes. Remove from oil and drain on paper towels.

    Mashing the Plantains

    In a mortar and pestle or a large bowl, mash the fried plantains with minced garlic, salt, and butter. Gradually add chicken broth until you achieve a creamy consistency. Set aside.

Pork Chunks & Shrimp Preparation

    Cooking the Pork

    In a large skillet, heat olive oil over medium heat. Add pork chunks and season with salt and pepper. Cook until browned and cooked through, about 10-12 minutes. Remove from skillet and set aside.

    Cooking the Shrimp

    In the same skillet, add diced onion and bell pepper. Sauté for about 3-4 minutes until softened. Add minced garlic and shrimp, cooking until shrimp turns pink and opaque, about 5 minutes. Stir in soy sauce and lemon juice. Mix well.

    Combining Pork and Shrimp

    Return the cooked pork to the skillet, combining it with the shrimp mixture. Cook for an additional 2-3 minutes to heat through. Adjust seasoning with salt and pepper as needed.

Garlic Sauce Preparation

    In another small saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes. Pour in chicken broth and add paprika. Simmer for 5 minutes. Adjust seasoning with salt and pepper to taste.
