Prepare Plantains
Peel the green plantains and cut them into 1-inch thick slices.

Fry Plantains
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the plantain slices and fry until golden brown on all sides, about 10-12 minutes. Remove from skillet and drain on paper towels.

In the same skillet, add the garlic cloves and sauté until fragrant, about 1-2 minutes. Remove from heat.

Mash Mofongo
In a large bowl, combine the fried plantains, sautéed garlic, chicken broth, salt, and pork cracklings. Use a mortar and pestle or a potato masher to mash everything together until well combined and slightly chunky.

Shape the mofongo into a dome on a plate or in a bowl and keep warm until ready to serve.
