Fry Plantains
Peel the green plantains and cut them into thick slices. Heat 2 tablespoons of olive oil in a large frying pan over medium heat. Fry the plantain slices until they are golden brown on both sides, about 5-7 minutes. Remove and drain on paper towels.

Prepare Garlic
In the same pan, add the garlic cloves and sauté for 1-2 minutes until fragrant. Remove from heat.

Mash Mofongo
In a large bowl, combine the fried plantains, sautéed garlic, chicken broth, salt, and pork cracklings. Using a mortar and pestle or a fork, mash the mixture until well combined and slightly chunky. Adjust seasoning to taste.
