    Peeling and Cutting Plantains

    Peel the green plantains and cut them into 1-inch thick slices.

    Frying Plantains

    In a large skillet, heat the olive oil over medium heat. Fry the plantain slices until golden yellow, about 4-5 minutes per side. Remove and set aside.

    Mashing Plantains

    In a mortar and pestle or a large bowl, combine the fried plantains, garlic cloves, and salt. Mash the mixture together until smooth.

    Adding Chicken Broth

    Gradually add the chicken broth and continue to mash until you achieve a fluffy consistency. Stir in the pork cracklings until well combined.

    Shape the mofongo into small balls or mounds and set aside.

Creole Pork Chops Preparation
