Mofongo

Method

Mofongo Preparation

  1. 1

    Fry Plantains

Peel and slice the green plantains into thick slices. Heat enough oil in a deep pan to fry the plantains until golden brown, about 4-5 minutes.

  2. 2

    Mash Plantains

Remove the fried plantains and place them in a large bowl. Add the garlic cloves and salt, then mash everything together until well combined.

  3. 3

    Mix with Broth

Add the chicken broth gradually while continuing to mash until you reach a smooth consistency. Drizzle with olive oil and mix well.

  4. 4

    Shape Mofongo

Scoop the mofongo mixture into a bowl or mold, pressing it down to shape it. Set aside.

Churrasco Preparation

  1. 5

    Marinate Flank Steak

In a bowl, combine olive oil, garlic powder, cumin, salt, black pepper, and lime juice. Rub this mixture all over the flank steak and let it marinate for at least 30 minutes.

  2. 6

    Grill Steak

Preheat a grill or grill pan over medium-high heat. Grill the flank steak for about 5-7 minutes per side, or until it reaches your desired doneness. Let it rest before slicing.

Shrimp Preparation

  1. 7

    Cook Shrimp

In a skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add shrimp, paprika, salt, and black pepper. Cook for 3-4 minutes until shrimp are pink and cooked through.

  2. 8

    Finish with Lemon Juice

Remove from heat and drizzle with lemon juice before serving.
