Mofongo Preparation

    Fry the Plantains

    Peel the green plantains and slice them into 1-inch thick pieces. Heat a large pan over medium heat and add enough olive oil to cover the bottom. Once the oil is hot, fry the plantain pieces for about 4-5 minutes on each side, until golden brown. Remove and drain on paper towels.

    Prepare the Mofongo Mixture

    In a mortar and pestle (or a mixing bowl), combine the fried plantains, garlic cloves, pork cracklings, and salt. Slowly add the chicken broth while mashing the mixture until it reaches a smooth consistency. Adjust the salt to taste.

    Shape the Mofongo

    Once the mixture is well combined and smooth, shape it into small bowls or mounds. Set aside while you prepare the breaded steak.

    Prepare the Steak

    Take the flank steak and slice it into thin cutlets. Use a meat mallet to pound the cutlets until they are about 1/4 inch thick. Season both sides with salt and black pepper.

    Breading Process

    Set up a breading station: place the flour in one shallow dish, beat the eggs in another dish, and place the bread crumbs in a third dish. Dredge each steak cutlet first in flour, shaking off excess, then dip in the beaten eggs, and finally coat with bread crumbs.

    Fry the Breaded Steak

    In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the breaded steak cutlets in batches, avoiding overcrowding the pan. Fry for 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
