Mofongo

Method

Mofongo Preparation

  1. 1

    Peeling and Slicing Plantains

Peel the green plantains and cut them into 1-inch slices.

  2. 2

    Boiling Plantains

In a large pot, bring water to a boil. Add the sliced plantains and cook for about 15 minutes until tender.

  3. 3

    Mashing Ingredients

Drain the plantains and transfer them to a large bowl. Add garlic, salt, and pork cracklings. Mash everything together until well combined, adding chicken broth as needed to achieve a smooth consistency.

  4. 4

    Shaping Mofongo

Form the mofongo mixture into small balls or molds. Set aside.

Breaded Fish Preparation

  1. 5

    Preparing the Breading Stations

Set up three bowls: one with all-purpose flour, one with beaten eggs, and one with breadcrumbs mixed with paprika, salt, and black pepper.

  2. 6

    Bread the Fish

Dip each fish fillet first into the flour, then into the beaten eggs, and finally coat with breadcrumbs.

  3. 7

    Frying the Fish

In a large frying pan, heat vegetable oil over medium heat. Once hot, carefully add the breaded fish fillets and fry for about 4-5 minutes on each side until golden brown and cooked through.

  4. 8

    Draining Excess Oil

Remove the fish from the pan and place them on a plate lined with paper towels to drain excess oil.

Serving

  1. 9

    Plating the Dish

On a serving plate, place a portion of mofongo and top it with the breaded fish. Serve hot.
