Mofongo

Method

Mofongo

  1. 1

    Prepare the Plantains

Peel the green plantains and cut them into 1-inch pieces.

  2. 2

    Fry the Plantains

Heat olive oil in a large skillet over medium heat. Add the plantain pieces and fry until golden brown, about 5-7 minutes. Remove from oil and place on paper towels to drain.

  3. 3

    Mash the Ingredients

In a large bowl, combine the fried plantains, garlic cloves, salt, and pork cracklings. Mash together using a mortar and pestle or a fork until well mixed, adding chicken broth as needed to achieve a smooth consistency.

  4. 4

    Shape the Mofongo

Form the mashed mixture into small balls or mounds and set aside.

Breaded Chicken Breast

  1. 5

    Prepare the Chicken

Pound the chicken breasts to an even thickness, about 1 inch.

  2. 6

    Set Up the Breading Station

Place all-purpose flour, beaten eggs, and breadcrumbs in separate shallow dishes. Season the flour with paprika, garlic powder, salt, and pepper.

  3. 7

    Bread the Chicken

Dredge each chicken breast in the flour, coating completely. Dip in the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.

  4. 8

    Fry the Chicken

In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
