    Marinate the Pork

    In a blender, combine garlic, soy sauce, orange juice, lemon juice, bay leaves, black peppercorns, and salt. Blend until smooth. Pour the marinade over the pork shoulder in a large container or a resealable bag and refrigerate for at least 8 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

Roasting

    Prepare the Pork for Roasting

    Remove the marinated pork from the refrigerator and let it sit at room temperature for about 30 minutes. Pat the pork dry with paper towels and rub it with olive oil for a crispy skin.

    Roast the Pork

    Place the pork in a roasting pan and cover it with aluminum foil. Roast in the preheated oven for 3 hours.

    Prepare Basting Mixture

    While the pork is roasting, melt the butter in a small saucepan over medium heat. Add minced garlic and sauté for about 2 minutes. Stir in pineapple juice and set aside.

    Baste the Pork

    After 3 hours, remove the foil and baste the pork with the butter and pineapple mixture. Increase the oven temperature to 400°F (200°C) and roast for an additional 45 minutes, basting every 15 minutes, until the skin is crispy and the internal temperature reaches 190°F (88°C).

    Once done, remove the pork from the oven and let it rest for about 20 minutes before carving. Serve with your favorite sides.
