Prepare Jerk Marinade

Blend Marinade Ingredients
In a blender or food processor, combine green onions, garlic, fresh thyme, allspice berries, scotch bonnet pepper, soy sauce, lime juice, brown sugar, salt, and black pepper. Blend until smooth.

Marinate Chicken
Place chicken thighs in a large bowl or zip-lock bag. Pour the jerk marinade over the chicken, ensuring all pieces are well coated. Cover or seal and refrigerate for at least 2 hours, preferably overnight.
Cook Chicken

Grill the Chicken
Preheat your grill or grill pan over medium-high heat. Remove chicken from marinade and discard excess marinade. Grill chicken thighs for about 6-7 minutes per side, or until cooked through and juices run clear.
Prepare Rice and Peas

Cook Rice and Beans
In a medium saucepan, combine cooked white rice, canned red kidney beans, coconut milk, water, thyme, and salt. Stir well to combine.

Simmer the Mixture
Bring the mixture to a gentle simmer over medium heat. Cover and cook for 10 minutes, allowing the flavors to meld and the beans to heat through.
